Apple cake

Ingredients:

  • 320g plain flour
  • 100g unsalted butter
  • 120g sugar
  • 1tsp baking powder
  • 2 medium eggs
  • vanilla flavouring
  • 800g cooking apples
  • 1 tsp of potato /corn starch (optional)
  • 2 tbsp of sugar
  • cinnamon

Method:

Mix flour, sugar, baking powder and add diced butter. You can mix everything in a food processor or just rub butter into the flour until all looks a bit like breadcrumbs. Add eggs and 1tsp of vanilla flavouring and knead until all ingredients make a dough. It should look like this:

Wrap it in cling film and place in the fridge for at lest 30 min. While your dough is chilling ;P you can prepare apple filling. Simply peel and dice apples and place in a sauce pan with a little bit of water (just to cover the bottom of the pan to prevent apples to burn). add 2 tbsp of sugar and stir until apples start to soften up and then add the starch mixed with about 50ml of water, stir quickly until all looks like jam with chunks of apples, just like this:

Take of the heat.

Preheat your oven to 200°C. Line 23cm round tin with baking paper, take dough out of the fridge and cut into two parts like on pic.1. Roll bigger part (about 400g of the dough) and cover bottom and about an inch of sides of the tin, fill with apples, sprinkle with cinnamon and cover with remaining dough, by pinching bits of the dough and place them on top of the filling. Now it should look like this:

Bake for about 50 minutes until golden-brown.
