This simple and very tasty dish can be served as a starter or as a part of any main course.
Ingredients:
- 1 zucchini
- 1 potato
- 1 carrot
- leek (about 3 inches of white part of the veg)
- thick slice of celeriac
- 1 small parsnip
- 2 eggs
- 4 tbsp of plain flour
- 4 tbsp of milk
- Pinch of salt, pepper, turmeic
- Oil for frying (I have used coconut oil)
Method:
Whisk eggs, milk, flour and seasoning. Finely slice leek and grate all vegetables, mix with batter. Place about two tbsp per pancake on a hot pan and fry for a few minutes on each side until golden brown.
Serve with any salad or sauce, eg. tomato sauce.
