Courgette (Zucchini) and vegetable pancakes

This simple and very tasty dish can be served as a starter or as a part of any main course.

Ingredients:

  • 1 zucchini
  • 1 potato
  • 1 carrot
  • leek (about 3 inches of white part of the veg)
  • thick slice of celeriac
  • 1 small parsnip
  • 2 eggs
  • 4 tbsp of plain flour
  • 4 tbsp of milk
  •  Pinch of salt, pepper, turmeic
  • Oil for frying (I have used coconut oil)

Method:

Whisk eggs, milk, flour and seasoning. Finely slice leek and grate all vegetables, mix with batter. Place about two tbsp per pancake on a hot pan and fry for a few minutes on each side until golden brown.

Serve with any salad or sauce, eg. tomato sauce.
