Sourdough starter/Zakwas

To bake sourdough bread you need a sourdough starter which you can make at home.

All you need is:

  • 150g rye flour
  • 300ml water
  • a jar.

Day 1 in the morning:

In a clean jar mix 50g of rye flour and 100ml water. Cover with paper towel and stand in a warm place. In the evening stir the mixture and leave over night.

Day 2 in the morning:

You will notice bubbles of air on the surface of the mix. That means that the flour is already fermenting. Add 50g of rye flour and 100ml of water. Leave it for a few hours to rise. In the evening, stir it and leave overnight.

Day 3:

“Feed” the starter with 50g flour and add 100ml water. After 3-5 hours the starter is ready to use.

To bake bread you need 200g of the starter. What with the rest? If you plan to bake bread the next day, just leave the starter out of the fridge and feed it in the morning like before. If not – keep the rest of it in closed jar in the fridge where it “hibernates” for up to 10 days and doesn’t need attention. Next time when you bake bread simply take the sourdough out of the fridge, add 50g of rye flour and 100ml of water and after 2-3 hours in warm place it is ready to use.

Do wykonania zakwasu potrzebne będą ci:

  • 150g mąki żytniej
  • 300ml wody
  • duży słoik

Dzień 1 rano:

Wymieszaj 50g mąki i 100 ml wody. Przykryj słoik ściereczką i odstaw w ciepłe miejsce. Wieczorem tylko zamieszaj i zostaw na całą noc.

Dzień 2 rano:

Na powierzchni powinny być już widoczne bąbelki. Dodaj kolejne 50g mąki i 100 ml wody, zamieszaj, zostaw do wieczora. Wieczorem wymieszaj jeszcze raz i pozostaw w ciepłym miejscu.

Dzień 3:

Nakarm zakwas pozostałą mąką i wodą. Po 3-5 godzinach zakwas będzie gotowy do użycia.

Do upieczenia pierwszego chleba potrzebne ci będzie około 200g zakwasu. Jeżeli zamierzasz piec chleb codziennie, możesz go trzymać na blacie, zamieszać wieczorem i dokarmić rano. Zakwas będzie coraz mocniejszy i jeśli jest go dużo w słoiku to może “wykipieć”. Najlepiej jest przechowywać zakwas w lodówce, gdzie może sobie siedzieć nawet tydzień bez zaglądania do niego. Jeżeli zamierzasz piec chleb, wyjmij zakwas z lodówki, dokarm 50g mąki żytniej i 100ml wody i odstaw na 3 godziny. Po tym czasie zakwas jest gotowy.
