Cabbage rolls (Golabki)

One of my childhood’s favourites – “Golabki” – is a dish consisting of cooked cabbage leaves and variety of fillings. Traditionally its made with minced pork, boiled rice and seasoning, served with tomato sauce. I have decided to cook vegetarian version and replaced meat with red lentils. I turned out to be the best version of Golabki I have ever eaten  😀 . This recipe makes average of 15-18 rolls which is  5-6 servings.

Ingredients for cabbage rolls:

  • 200g dry rice
  • 100g red split lentils
  • 1 crushed garlic clove
  • 50g finely diced carrot
  • 50g finely diced celeriac
  • 50g finely chopped leeks or onion
  • 50g finely diced mushrooms
  • 2 tbsp of olive oil
  • salt (about 1 tbsp), black pepper, ground coriander seeds
  • 1 egg
  • large whole savoy cabbage*

Ingredients for tomato sauce:

  • 5 tbsp tomato puree
  • 3 tbsp tomato ketchup
  • 500ml water
  • 2 tbsp plain flour
  • seasoning: salt, pepper, basil, pinch of cinnamon

Method:

  1. Rinse rice in cold water. In a large saucepan boil about 2 litres of water, add rice and lentils and boil for 8-10 minutes, drain after that time and put back into the saucepan.
  2. In a separate pan, heat the oil, add leek, garlic, carrot, celeriac and fry for 3 minutes, add mushrooms and fry for another 3 minutes. Add everything to the rice and lentils, season well with salt, pepper and coriander. Taste and add more seasoning if required. Add egg.
  3. Bring the large pot of lightly salted water to boil. Gently place the cabbage in the water, and boil for 2 minutes until cabbage leaves are easy to remove. Remove 15 leaves and peel of any thick tough center stem
  4. Place about 2-3 tbsp** of the filling on the end of the cabbage leaf and fold like on the pictures below:collage2
  5. Repeat step 4 with all the leaves. Line the bottom of a large pot with leftover leaves and place rolls tightly in the pot. You will have more than one layer of rolls in the pot – separate each layer with cabbage leaves. Cover rolls with veg stock, bring to boil and simmer for about 30 minutes or until leaves are tender but not to soft, otherwise rolls can fall to pieces. After rolls are cooked remove them from the stock.
  6. Prepare sauce: mix all ingredients for sauce in a jug. Pour into a saucepan and bring to boil on a medium heat constantly stirring it. – you can use a whisk.

Serve warm.

If you have any cabbage rolls left over, place them in a ovenproof dish, cover with kitchen foil, add tomato sauce or some water just to cover bottom of the dish and you can reheat it later in the oven at 180°C for about 30 mins.

*You can also use white or green cabbage, depends on availability.

**Cabbage leaves will have slightly different sizes. Adjust the amount of the filling so proportions are like on picture 1.

Składniki na nadzienie: 

  • 200g suchego ryżu
  • 100g czerwonej soczewicy
  • 1 ząbek czosnku
  • 50g drobno posiekanej marchewki
  • 50g drobno pokrojonego selera
  • 50g drobno posiekanego pora 50g drobno pokrojonych pieczarek
  • 2 łyżki stołowe oliwy z oliwek lub innego oleju
  • 1 łyżka soli, pieprz czarny, zmielone ziarno kolendry (około 1 łyżeczki)
  • 1 jajko
  • 1 duża włoska kapusta

Składniki na sos pomidorowy:

  • 5 łyżek przecieru pomidorowego
  • 3 łyżki keczupu
  • 500ml wody
  • 2 łyżki mąki
  • Przyprawy: sól, papryka, bazylia, szczypta cynamonu

Wykonanie:

  1. Wypłucz ryż w zimnej wodzie, odcedź. W dużym garnku zagotuj 2 litry wody, dodaj ryż i soczewicę i gotuj przez 8-10 minut. Po tym czasie dobrze odcedź i przełóż z powrotem do garnka.
  2. Na dużej patelni rozgrzej oliwę i dodaj posiekane warzywa i smaż przez 3 minuty, a następnie dodaj pieczarki i smaż przez kolejne 3 minuty. Wszystko z patelni przełóż do garnka z ryżem i soczewicą, przypraw dobrze solą, pieprzem i kolendrą. Spróbuj i dopraw jeśli potrzeba. Dodaj jajko.
  3. W dużym garnku zagotuj wodę i lekko ją posol. Umieść całą głowę kapusty we wrzątku i gotuj przez 2 minutki, tylko do momentu aż liście zaczną się łatwo oddzielać. Potrzebne Ci będzie 15-18 liści. Odetnij grubą część liścia.
  4. Nakładaj około 2-3 łyżki nadzienia, lub mniej lub więcej w zależności od wielkości liścia i zawijaj jak na zdjęciach poniżej:
  5. Po zawinięciu gołąbków, wyłóż dno dużego garnka pozostałymi liśćmi. Oddziel warstwy gołąbków warstwą liści. Zalej gołąbki woda lub bulionem warzywnym(!), zagotuj. Gotuj przez około 30 minut, aż do miękkości, jednak nie za długo, gdyż gołąbki będą się rozpadać. Po ugotowaniu gołąbki mogą zostać w garnku, ale ja zawsze przekładam to co zostało (niezjedzone 😛 ) do naczynia żaroodpornego i zalewam sosem. W ten sposób następnego dnia wrzucasz do piekarnika na 30 minut 180C i obiadek gotowy!
  6. Sos: wymieszaj w garnku razem wszystkie składniki, zagotuj i zmniejsz gaz. Ciągle mieszaj, aż do zgęstnienia.
