Baked doughnuts with raspberry jam/Pieczone pączki z dżemem malinowym

I was planning to make traditional, deep fat fried doughnuts… I have bought a lot of coconut oil, the refined one because it supposed to be the best, healthiest option for cooking and deep fat frying. I also purchased food thermometer to make sure the oil has the right temperature – it should be about 175°. Lower temperature would result in doughnuts absorbing too much fat, higher – doughnuts would burn on the outside and stay raw inside… So, being prepared for the very first doughnuts making challenge, I decided: I’m not going to fry them in oil, but oven bake 🙂 . Ingredients:

  • 500g plain flour
  • 12g dried yeast or 24g of fresh yeast
  • 100g caster sugar
  • 1 small egg
  • 3 egg yolks from large eggs
  • 250ml milk
  • 50g melted butter, cooled down
  • vanilla extract
  • pinch of salt
  • jam for the filling
  • 200 Icing sugar

Method:

  1. Sift the flour and mix with dried yeast. Fresh yeast must be activated. To do this, add yeast to about 50ml luke warm milk and mix with 1tsp of sugar and 2tbsp of plain flour. Set aside for 10 minutes.
  2. Add sugar, milk, egg yolks, egg, vanilla and pinch of salt and mix together, add melted butter and mix until the dough becomes smooth and elastic. Form a ball, place in a lightly floured bowl and leave to proof in a warm place for 1-1,5 hr.
  3. Line 12 hole muffin tin with paper cases. To form a doughnut, scoop out a tablespoon of the dough, about 55g per doughnut, flatten it on your hand, place a teaspoon of jam in the middle of the dough, close the edges and press well so the filling doesn’t come out while baking. Form a ball and place in a muffin case. This recipe makes about 16-18 doughnuts. Leave to proof in a warm place until double in size.
  4. Preheat the oven to 185°C and bake for about 15 minutes. Take out of the oven and leave to cool on a wire rack.

Pieczone pączki mogą z powodzeniem zastąpić te tradycyjne, smażone w głębokim oleju. Są równie pyszne i nieco łatwiejsze do zrobienia. Podczas smażenia pączków, bardzo istotne jest utrzymanie odpowiedniej temperatury oleju. Zbyt niska spowoduje, że pączki pochłoną za dużo tłuszczu, a zbyt wysoka, że pączki przypalą się, a w środku będą surowe.  Dlatego na moje pierwsze w życiu pączki wybrałam wersję pieczoną.

Składniki:

  • 500g mąki pszennej białej
  • 12g drożdży instant lub 24g świeżych
  • 1 małe jajko
  • 3 żółtka
  • 100g drobnego cukru
  • 250ml letniego mleka
  • 50g roztopionego i schłodzonego masła
  • wanilia
  • szczypta soli
  • dżem lub marmolada/konfitura do nadziewania
  • cukier puder do posypania lub na lukier – około 200 gram.

Wykonanie:

  1. Przesianą mąkę wymieszaj z suchymi drożdżami. Jeśli używasz świeżych drożdży, najpierw należy zrobić zaczyn (50ml letniego mleka, łyżeczka cukru, 2 łyżki mąki – wymieszać, odstawić na 10 minut).
  2. Następnie dodaj cukier, jajko, żółtka, sól, mleko i wanilię. Wyrabiaj przez chwilę, aż wszystkie składniki się połączą, dodaj roztopione masło i wyrabiaj jeszcze kilka minut, aż ciasto będzie gładkie i elastyczne. Uformuj kulę, wsadź do oprószonej mąką miski i odstaw w ciepłe miejsce do wyrośnięcia na 1,5 godziny.
  3. Foremkę do muffinek wyłóż papilotkami.  Nabieraj łyżką porcje ciasta ważące około 55-58g. Formuj lekko spłaszczone krążki i nakładaj na środek każdego łyżeczkę dżemu, zlepiaj brzegi, uformuj kulki i umieść w papierowych foremkach. Przykryj delikatnie ściereczką i odstaw do wyrośnięcia, aż podwoją objętość. Z tej ilości ciasta powinno wyjść 16-18 pączków.
  4. Rozgrzej piekarnik do 180°C i piecz przez 15 minut.
  5. Po wyjęciu z piekarnika, umieść pączki na kartce do przestygnięcia. Posyp cukrem pudrem lub zmieszaj cukier z dwiema łyżkami gorącej wody i polej pączki lukrem.20170224_191352
