Walnut and raisins bread/Chleb z orzechami włoskimi i rodzynkami

Delicious, soft bread with crunchy walnuts and pre-soaked raisins, that reminds me with its taste and texture of hot cross buns. The soft texture is achieved by adding some butter and milk to the dough,  instead of just water like in traditional breads. I enjoy it best with a generous layer of butter and jam, accompanied with a nice cuppa…

Ingredients:

  • 450g whole-wheat flour
  • 450g bread flour
  • 7g dried yeast
  • 17g salt
  • 130g raisins
  • 130g walnuts
  • 300ml water
  • 200ml milk
  • 100g soft butter
  • 2 tsp sugar
  • Egg for eggwash

Method:

  1. Pour warm water over the raisins and leave to soften for about 30 minutes. Drain well before adding to the dough.
  2. Mix flour, whole-wheat flour, dried yeast, salt and 2 tsp sugar. Add diced, softened butter and combine with dry ingredients – rub it into the flour untill you get a consistency of breadcrumbs. Add drained raisins and walnuts and mix well.
  3. Add water and milk, mix until well combined. Knead for about 5 minutes, the dough can be a bit sticky to start with, but try not to add more flour. Cover the bowl with a tea towel and leave to proof for 1 hour.
  4. Stretch and fold the dough 2 or 3 times and leave for further hour.
  5. Divide the dough into two large or 3 medium portions. The dough can  be shaped into cylinders and placed in large loaf pans. You can also form oblong loaves and place in floured proofing baskets, seams up. Leave for 1 to 1½.
  6. Preheat the oven to 230°C. Just before placing bread in the oven, eggwash and score loaves. Bake for 20 minutes, after that time lower the temperature to 200°C and bake for another 15-20 minutes for medium loaves or 25 for large. Take out of the oven and place on a wire rack to cool down.

  • 450g mąki pszennej
  • 450g mąki pszennej razowej
  • 7g suchych drożdży
  • 17g soli
  • 130g rodzynek
  • 130 orzechów włoskich
  • 300ml wody
  • 200ml mleka
  • 100g masła
  • 2 łyżeczki cukru
  • 1 jajko

Wykonanie:

  1. Zalej rodzynki gorącą wodą i odstaw na 30 minut. Odcedź przed dodaniem do ciasta.
  2. Wymieszaj mąki, drożdże, sól i dwie łyżeczki cukru. Dodaj miękkie masło pokrojone w kostkę i wetrzyj w suche składniki, do otrzymania konsystencji bułki tartej. Wsyp orzechy i odcedzone rodzynki.
  3. Dodaj wodę i mleko, wymieszaj dokładnie i wyrabiaj przez 5 minut. Ciasto może być lekko klejące, ale staraj się nie dosypywać więcej mąki. Przykryj miskę ściereczką i odstaw na godzinę.
  4. Rozciągnij ciasto i złóż kilkakrotnie. Ponownie odstaw na godzinę.
  5. Podziel ciasto na dwie lub trzy porcje. Uformuj owalne bochenki i umieść je w dużych foremkach do pieczenia chleba lub w posypanych mąką koszykach do wyrastania chleba łączeniem do góry. Pozostaw do wyrośnięcia na 1-1½.
  6. Rozgrzej piekarnik do 230°C. Przed wstawieniem do piekarnika posmaruj bochenki roztrzepanym jajkiem. Piecz przez 20 minut, następnie zmniejsz temperaturę do 200°C i piecz przez 15-20 minut dla średnich bochenków i 25 minut dla dużych. Wyjmij z piekarnika i ostudzić na kratce.
