Sourdough beer bread/Chleb piwny na zakwasie

This is another delicious sourdough bread recipe I came across recently. It comes from the book “Bread” by Jeffrey Hamelman. The rye sourdough and liquid levain is prepared at the same time and left to ripen for 14 to 16 hours at room temperature. This bread has got dense and moist texture with rich flavour that comes from dark ale and whole-rye flour.

Ingredients for sourdough:

Ingredients for liquid levain:

  • 90g wheat bread flour
  • 115g water
  • 15g mature culture

Ingredients for final dough:

  • 635g wheat bread flour
  • 35g whole-rye flour
  • 45g whole-wheat
  • 240g water
  • 275g dark ale
  • 3g dried yeast
  • 17g salt
  • Sourdough minus 2tbsp for next bake
  • Liquid levain minus 2tbsp for next bake

Method:

  1. Prepare the rye sourdough and ripen for 12-16 hours.
  2. Prepare the liquid levain at the same time the sourdough is prepared and leave for about 12-16 hours.
  3. After 12 to 16 hours mix together all ingredients for the final dough until well combined. Remember to take away 2 tbsp of sourdough and liquid levain and leave them in the fridge for the next time you bake bread or for up to 7 days without feeding. Cover the dough and leave for 20 minutes.
  4.  Turn on the mixer on first speed and mix for about 10 seconds or just use a spoon and mix for the same amount of time.
  5. After 20 minutes give the dough second folding, cover and leave for another 20 minutes. After that time mix the bread dough for about 2 minutes, lave it to proof for 2 hours with quick fold after one hour.
  6. Divide the dough into two portions. Shape round or oblong loaves that can be placed in proofing baskets or baking tins – whatever is more convenient for you. Leave to proof for 1¼ to 1½ hours. The perfect room temperature is 24°C.
  7. Preheat the oven to 230°C. Score the bread just before baking. Place loaves in the oven and bake for 15 minutes, turn the temperature down to 200°C and bake for further 25 minutes.

  • 100g mąki żytniej razowej
  • 85g wody
  • 2 łyżki zakwasu żytniego

Składniki na zaczyn z mąki pszennej:

  • 90g mąki pszennej
  • 115g wody
  • 2 łyżki dojrzałego zakwasu pszennego

Składniki na ciasto właściwe:

  • 635g mąki pszennej
  • 35g mąki żytniej razowej
  • 45g mąki pszennej razowej
  • 240g wody
  • 275g ciemnego piwa
  • 3g suchych drożdży
  • 17g soli
  • Zakwas żytni przygotowany 12-16 godzin wcześniej
  • Zaczyn pszenny przygotowany 12-16 godzin wcześniej

Wykonanie:

  1. Wymieszaj składniki na zakwas żytni i zostaw pod przykryciem na 12-16 godzin w temperaturze pokojowej.
  2. Przygotuj zaczyn z mąki pszennej, przykryj ściereczką i odstaw na 12-16 godzin.
  3. Zanim wymieszasz wszystkie składniki, odejmij dwie łyżki zakwasu żytniego i przechowuj w lodówce w pojemniku z przykrywką do następnego pieczenia lub do 7 dni bez dokarmiania. Zrób to samo z zaczynem pszennym. Wymieszaj dokładnie składniki na ciasto właściwe i pozostaw pod przykryciem na 20 minut.
  4. Po 20 minutach przemieszaj ciasto ponownie przez 10 sekund. Przykryj i odstaw w ciepłe miejsce.
  5. Po kolejnych 20 minutach zamieszaj ciasto ponownie. Po tym czasie wyrób ciasto przez 2 minuty i pozostaw do końcowej fermentacji na 2 godziny.
  6. Przemieszaj ciasto i podziel na dwie porcje. Uformuj okrągłe lub podłużne bochenki i umieść je w koszykach do wyrastania chleba lub foremkach do pieczenia wysypanych mąką. Odstaw do wyrośnięcia na 1¼ – 1½ godziny w temperaturze pokojowej. Idealna temperatura to 24°C.
  7. Rozgrzej piekarnik do 230°C i piecz chleby przez 15 minut. Następnie zmniejsz temperaturę do 200°C i piecz przez kolejne 25 minut.
