One late afternoon after work I was craving something sweet but all I had was a bunch of very ripe bananas in a fruit bowl. Using this very simple recipe I turned them into a delicious, rich and moist banana cake.
Ingredients:
- 3-4 ripe bananas
- 75ml sunflower oil
- 100g demerara sugar
- 1 egg
- Vanilla extract
- 250g plain flour
- 1 tsp baking soda
- Pinch of salt
- 40g chopped pecans
- About 20ml milk if the cake mixture seems too thick
Method:
- Pre-heat the oven to 170°C and grease a 10x20cm loaf tin.
- In a large bowl mix together plain flour, sugar, soda, salt and chopped pecans.
- Mash up bananas with a fork, add egg, sunflower oil and a tablespoon of vanilla extract. Pour the mixture into the bowl with dry ingredients and mix with a spoon until just combined. I the cake batter seems to thick, add 20ml milk.
- Transfer the mixture into the prepared tin. Bake for 55-60 minutes until skewer comes out clean.

- 75ml oleju słonecznikowego
- 100g brązowego cukru
- 1 jajko
- Aromat waniliowy
- 250g mąki
- 1 łyżeczka sody oczyszczonej
- Szczypta soli
- 40g posiekanych orzechów pekan
- 20ml mleka jeśli ciasto jest zbyt gęste
Wykonanie:
- Rozgrzej piekarnik do 170°C. Keksówkę o wymiarach 10x20cm masłem.
- W dużej misce wymieszaj przesianą mąkę, sodę, sól, cukier i posiekane orzechy.
- Rozgnieć banany widelcem, dodaj jajko, olej słonecznikowy i łyżeczkę ekstraktu waniliowego. Wymieszaj łyżką mokre składniki z suchymi tylko do połączenia składników. Jeśli ciasto jest bardzo gęste, dodaj 20ml mleka.
- Przełóż ciasto do foremki i piecz w rozgrzanym piekarniku przez 55-60 minut, do suchego patyczka.
