Delicious cake on a sweet shortcrust pastry base, with orange flavoured cream cheese layer and topped with mandarins pieces in orange flavoured jelly. It will make a great refreshing dessert for a hot day.
Ingredients for the base: Place all the ingredients in a food processor and mix until combined. If needed, add a tablespoon or two of cold water. Form a ball, wrap in cling film and chill for 60 minutes. Prepare a rectangular 23 x 33cm baking tray, grease with butter and line with baking parchment. Roll out the dough to the size of the baking tray. Preheat the oven to 190°C, pierce the dough with a fork and bake for 15-20 minutes, until pale golden. Leave to cool down in the tray. For the cheesecake. Mix the jelly with 250ml hot water and stir until dissolved. Then add cold water – a bit less than it says on the pack – I have added 200ml of cold water. Let it cool down until luke warm. Place the cream, mascarpone and icing sugar in a mixing bowl and whip until thick and creamy. Turn the mixer down to a low setting and slowly add the jelly. Mix until just combined. It will become a bit runnier but it’s ok. Pour the mixture over the base and place in the fridge to set. When it’s set prepare the top layer. Top layer: Prepare the jelly as instructed on the packet, add a half of hot and a half of cold water. Let it cool. Place the mandarin segments on top of the cake and slowly pour in the jelly. Put in the fridge and leave for a few hours before serving or preferably for all night. Przygotuj prostokątną blaszkę o wymiarach 23 x 33cm, wysmaruj dno masłem i wyłóż papierem do pieczenia. Schłodzone ciasto rozwałkuj i wyłóż dno formy. Rozgrzej piekarnik do 190°C i piecz spód przez 15 minut lub na złoty kolor. Odstaw do ostygnięcia. Składniki na sernik: Wymieszaj galaretkę z 250ml gorącej wody, a następnie dolej 200ml zimnej wody , żeby galaretka szybciej ostygła. Resztę składników zmiksuj na gęstą masę. Cienkim strumieniem dodawaj schłodzoną galaretkę, cały czas mieszając. Gdy tylko wszystko się połączy, przełóż masę na kruchy spód i wyrównaj powierzchnię. Wstaw do lodówki na około 2 godzin. Składniki na górną warstwę: Gdy sernik stężeje, ułóż kawałki mandarynek i zalej schłodzoną, tężejącą galaretką. Wstaw do lodówki na kilka godzin lub całą noc.
